Lazy Day Eggplant Curry

Sometimes boxed curry mixes can make a simple curry for a day when you don't have time to make your own curry. I used 3.5 oz. box of Golden Curry mix. The heat can be higher or lower and other vegetables can be added or taken away.

Ingredients

• 1 (4 ounce)  pork steak, 1 large pork steak
• 2  tablespoons olive oil
• 3 1⁄2 ounces  curry sauce mix
• 2  cups water
• 1  hot pepper, seeded
• 1  large onion, cut into 6 pieces
• 1  large red bell pepper, large slices
• 1  cup fresh green beans
• 4 -6  garlic cloves, peeled
• 3  baby eggplants

Directions

1. Fry the pork in the oil for about 5 minute each side -- cut into cubes.
2. Into a large saucepan place the Golden Curry sauce mix,.
3. chopped or broken up ,the water,cooked pork and the hot pepper -- let it simmer on low 5 minute.
4. Add all the other ingredients and continue to simmer untill done to your liking or 25 minute.
5. Spoon over cooked rice. Serves 4.
