Laura's Southwest Tater Tot Hotdish

I developed this recipe because the usual tater tot hotdish didn't have enough pizazz. After a couple of tries I think I've found the perfect combination of ingredients that's pleasing for many different people. Show more

Serves: 4-5

Ingredients

  • 16  ounces  of seasoned  tater tots
  • 16  ounces ground turkey
  • 1 (10 3/4ounce) can  cream of chicken soup
  • 1 (10 ounce) can  green enchilada sauce (med hot)
  • 1 (15 ounce) can  black beans with jalapenos and lime juice
  • 1 14 ounces  fajita seasoning mix
  • 1  cup  shredded cheddar cheese

Directions

  1. Line a 8 x 8 pan with frozen tater tots and let them thaw completely for several hours.
  2. Cook the ground turkey in a separate pan and drain off fat.
  3. Add soup and fajita seasoning to the cooked turkey. Mix well & set aside.
  4. Pour the green enchilada sauce over the thawed tots.
  5. Pour black beans on top (as well as liquid in the can) and spread evenly.
  6. Add half of the shredded cheese on top of beans.
  7. Add turkey mixture. Top with the remaining cheese.
  8. Cover with tinfoil and bake in preheated oven of 350 degrees for 1 hour.
  9. Note: If you like a little crunch in your hotdish I break up some tortilla chips and mix in the finished product.
