Ingredients

  • 1 (28 ounce) package  Simply Potatoes Diced Potatoes with Onion
  • 8  slices  thick  pepper bacon
  • 1 12 cups red bell peppers, diced
  • 6  eggs, beaten
  • 34 cup cheddar cheese, shredded

Directions

  1. Cook all six pieces of bacon in a large skillet over medium heat. Do not overcook. When bacon is cooked through but still soft, remove from pan.
  2. Discard half of the bacon grease and leave the other half in the skillet(resist counting calories, it is totally worth it!). Return skillet to medium heat and add entire package of Simply Potatoes Diced Potatoes with Onion. Lightly toss potatoes in bacon grease and add diced red bell pepper. Cook, stirring occasionally, for 3-5min or until potatoes are heated and bell pepper is beginning to soften.
  3. Add eggs(if all of the bacon grease has been absorbed by this time, add a small amount of olive oil). Do not stir the eggs for 30 seconds after adding them to the pan, allowing the bottom half to cook. Then "push" the eggs around and turn the cooked eggs to the top, allowing the uncooked portion to filter to the bottom of the pan. Repeat until eggs are cooked. Add salt and pepper to taste.
  4. Remove pan from heat, distribute cheese evenly over the top and let sit for 1-2minutes or until cheese is melted. Serve and enjoy!
