Kolokithokeftedes (Pumpkin Patties)

Ingredients
- 2 1⁄2 cups grated pumpkin pulp, strained
- 1⁄2 cup chopped onion
- 4 eggs
- 2 tablespoons minced garlic
- 2 tablespoons minced parsley
- 1 tablespoon ground cumin
- 2 cups breadcrumbs
- salt and pepper
- 2 cups flour
- 1 cup vegetable oil (for frying)
- sesame seeds, sauce (optional)
Directions
- Combine all ingredients except flour, oil, and Sesame Seed Sauce; blend well.
- Shape into 2-inch patties, and roll in flour.
- Fry in vegetable oil until golden brown. Drain on paper towels.
- Serve warm accompanied by Sesame Seed Sauce (optional).
