Knock Off Fried ( Baked ) Chicken

Ingredients
Egg mixture
- 3 egg whites
- 1 teaspoon Worcestershire sauce
- 1 pinch white pepper
Crunch Coating
- 1 cup whole wheat flour
- 1⁄2 cup oat bran
- 1⁄4 cup wheat germ
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon paprika
- 1⁄2 teaspoon red pepper flakes
- 1⁄4 teaspoon ground cloves
- 1 pinch white pepper
- 2 skinless chicken breasts
- 2 skinless chicken thighs
- 2 skinless chicken drumsticks
- 1 can defatted chicken broth, save any extra,using only enough to coat baking dish
Directions
- Heat oven to 400 degrees.
- In a large bowl whisk egg whites, Worcestershire sauce and a pinch of white pepper, set aside.
- In another bowl combine the crunch coating ingredients.
- Roll the chicken pieces in the egg mixture then in the crunch coating, coating well Pour enough of the chicken broth to coat the bottom of a 9 x 13 baking dish Place chicken in dish, cover with waxed paper.
- Bake for 10 minutes.
- Remove the wax paper.
- Return to oven and bake until golden brown, 10- 15 minutes more- add more broth if too dry on bottom of pan Serve with favourite sauce.
