  1. Dissolve gelatin in boiling water.
  2. Stir in grated lemon peel; chill until consistency of unbeaten egg white.
  3. Fold in whipped topping; set aside.
  4. Cut one kiwi fruit into 8 slices; chop remaining two.
  5. Alternate layers of gelatin mixture and chopped kiwi fruit into 8 parfait glasses; chill 1 hour.
  6. Garnish with sliced kiwi fruit.
