Kiwi Matcha Lime Tea Cake

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 2 teaspoons matcha green tea powder
- 1⁄2 teaspoon salt
- 1⁄2 cup butter, softened
- 2⁄3 cup granulated sugar
- 2 large eggs
- 1 cup peeled mashed very ripe kiwi fruit (green, yellow or combination)
- zest of one lime
Directions
- Preheat oven to 350 degrees.
- Grease a 9 X 5 loaf pan.
- Whisk together flour, baking powder baking soda, matcha powder and salt and set aside.
- In a large bowl, cream butter and sugar together until light and fluffy.
- Add eggs, one at a time, to butter mixture, and thoroughly combine. Stir in mashed kiwi fruit and lime zest.
- Fold in dry ingredients, stirring until batter is completely moistened. Do not over-stir. Spoon batter into pan.
- Bake for 1 hour or until toothpick inserted comes out clean. Cool for 20 minutes on wire rack. Remove from pan and continue cooling on rack.
