Kiwi Matcha Lime Tea Cake

From the "Cooking with Amy" food blog (cookingwithamy.blogspot.com) comes this unusual and colorful quick bread. It's a great way to use up too-ripe kiwis. Amy describes it as "tangy and moist, not too sweet, and great with a cup of tea." I haven't tried it yet, simply because I have no matcha (green tea powder) on hand. You could make this without the matcha, but I love green tea so much that I want to wait until I can make the recipe as written.   1. Preheat oven to 350 degrees.
  2. Grease a 9 X 5 loaf pan.
  3. Whisk together flour, baking powder baking soda, matcha powder and salt and set aside.
  4. In a large bowl, cream butter and sugar together until light and fluffy.
  5. Add eggs, one at a time, to butter mixture, and thoroughly combine. Stir in mashed kiwi fruit and lime zest.
  6. Fold in dry ingredients, stirring until batter is completely moistened. Do not over-stir. Spoon batter into pan.
  7. Bake for 1 hour or until toothpick inserted comes out clean. Cool for 20 minutes on wire rack. Remove from pan and continue cooling on rack.
