Kiwi Colada Freezer Jam

A blend of kiwi fruit, pineapple juice and rum in a delicious jam. Good way to use the kiwis that are too ripe for anything else. Very quick and no cooking. Recipe makes about 4 cups. Show more

Yields: 4 cups, approx.

Ingredients

  • 9  very ripe peeled kiwi fruits
  • 12 cup dark rum
  • 34 cup  unsweetened pineapple juice
  • 1 12 cups sugar
  • 2  teaspoons  coconut flavoring
  • 2  tablespoons lemon juice
  • 1  packet  of powered  freezer jam pectin

Directions

  1. Mix sugar, rum, pineapple juice, lemon juice and coconut flavoring in a large bowl. stir until sugar is dissolved. You may want to warm this mixture slightly in microwave oven to help sugar dissolve.
  2. When above mixture is well blended add kiwi fruit and mash with a potato masher till fruit is a lumpy pulp.
  3. Let mixture sit in bowl for 15 minutes.
  4. Then add powered pectin according to package directions.
  5. Pour finished jam into clean freezer containers leave 1/2 inch space at top.
  6. refrigerate or freeze.
  7. Will keep for 1 year in freezer.
