  1. In a saucepan, boil the pumpkin in water until soft. Drain and mash.
  2. In a medium saucepan, heat the oil and saute the onion until golden.
  3. Add milk, pumpkin, salt and sugar.
  4. Gradually stir in cornmeal.
  5. Cook about 10 minutes, stirring continuously.
  6. Add cheese, remove from heat, and continue stirring until blended.
