King Ranch Chicken

Ingredients

  • 1  medium onion, chopped
  • 1  medium green pepper, chopped
  • 3  tablespoons margarine
  • 1 (14 1/2ounce) can  diced tomatoes tomatoes
  • 1 (10 ounce) can Rotel Tomatoes
  • 1 (10 3/4ounce) can  condensed cream of mushroom soup
  • 1 (10 3/4ounce) can  condensed cream of chicken soup
  • 13 cup  picante sauce
  • 1  tablespoon chili powder
  • 12  corn tortillas, torn into 1 inch strips
  • 3 (13 ounce) cans chicken
  • 34 cup  shredded cheddar cheese

Directions

  1. Cook onion and green pepper in margarine until tender.
  2. Remove from heat.
  3. Add tomatoes, soups, picante, and chili powder, mix well.
  4. Line bottom of shallow 3 quart casserole pan with 1/2 of tortillas strips.
  5. Top with 1/2 the chicken and 1/2 the vegetable mixture.
  6. Repeat layers.
  7. Sprinkle with cheese.
  8. Bake uncovered @ 350F for 35 minutes.
