Ingredients
- 1 1⁄4 cups cooked drained kidney beans
- 1⁄3 cup grilled corn kernel
- 1⁄4 cup chopped cherry tomatoes
- 2 tablespoons finely diced sweet onions
- 1 tablespoon thinly sliced green onion
Vinaigrette
- 3 tablespoons sherry wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon grainy mustard
- 1 teaspoon herbes de provence
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- In a bowl, combine beans and vegetables. Whisk together vinaigrette ingredients and mix into beans.
