Kicked up Bacon-Cheese Mashed Potatoes

Directions

  1. Place potatoes and 1 tsp salt in a saucepan, cover with water, bring to a boil.
  2. Reduce heat to simmer.
  3. Cook until potatoes are tender, about 20 minutes.
  4. Drain, return to pot.
  5. Add half and half, butter, remaining salt, pepper.
  6. Place pan over medium low heat, mash for 4-5 minutes.
  7. Add bacon, cheese, sour cream, chives and stir.
