Kick-A-- Egg Salad

Ingredients
- 6 chopped hard-boiled eggs (cover eggs in cold water in saucepan, bring to boil on high and then simmer on medium low for 15 min)
- 1⁄2 teaspoon white vinegar (or 1/2 teaspoon juice from jar dill pickles)
- 2 -3 tablespoons mayonnaise
- 1⁄2 teaspoon mustard
- salt and pepper
- red pepper flakes, 1 shake (optional)
- 1⁄2 stalk chopped celery (optional)
- 1 tablespoon chopped green onion (optional)
Directions
- boil eggs and cool, peel and chop.
- add remaining ingredients and mash together.
- spread on sandwich bread or toast.
- *note - add more or less of ingredients to your taste.
