Key Lime Pie

This is such a delightful pie - made with Eagle Brand sweetened condensed milk - very, very good!!

  1. CRUST: In a bowl, mix graham crumbs, sugar and melted butter. Press into a 9-inch pan.
  2. FILLING: Using an electric mixer, mix the yolks, Eagle Brand, Key lime juice and zest, until thickened. Pour into the pie shell and refrigerate overnight until set.
  3. MERINGUE: Whisk eggs and sugar to a stiff peak. Spoon or pipe on the pie and bake in a preheated 350F oven for about 12 minutes, or until golden brown.
  4. Leave to cool on a rack, then refrigerate.
