Ingredients

  • CRUST

  • 12 cup  chopped pecans
  • 19 14 ounces  white cake mix
  • 12 cup butter, melted
  • FILLING

  • 3  egg yolks
  • 14  ounces sweetened condensed milk
  • 23 cup lime juice
  • 1  drop  green food coloring
  • 8  ounces  frozen whipped topping, thawed
  • 8  lime slices, for garnish

Directions

  1. Preheat oven to 350*.
  2. FOR CRUST:.
  3. Spread pecans in shallow baking pan --
  4. Bake 5 minutes or until lightly browned.
  5. Combine pecans, cake mix and melted butter.
  6. Stir until crumbs form, spread in bottom of ungreased 13x9x2 pan.Press lightly.
  7. FOR FILLING:.
  8. Combine egg yolks, sweetened condensed milk, lime juice and food coloring, if desired, in medium bowl.
  9. Stir until well blended.
  10. Spread over crust.
  11. Bake at 350*.for 15 minutes.or until set.
  12. Cool 15 minutes.
  13. Refrigerate until chilled.about 2 hours.
  14. To serve, cut into squares.
  15. Top with dollops of whipped topping and lime slices, if desired.
