Keto Cocoa Peppermint Fat Bombs

These little truffle-like balls may be small, but they have a great flavor punch. Being on the Keto diet is pretty easy, but I find I don't fulfill my daily fat quota. I just pop one of these as a snack and it also satisfies my sweet tooth. Even my family loves them. Show more

Yields: 12 pieces

Ingredients

  • 1 (8 ounce) package cream cheese (room temperature)
  • 14 cup butter (room temperature)
  • 2 -4  tablespoons artificial sweetener (I use Xylitol)
  • 13 cup  hershey's special  dark cocoa (plus extra for dusting)
  • 12 teaspoon  peppermint extract

Directions

  1. Place softened cream cheese and butter in bowl. Beat with a mixer until soft and fluffy.
  2. Add sweetener. Start with 2 tablespoons and add more if you want it sweeter.
  3. Add cocoa and peppermint extract. mix until smooth and creamy.
  4. Chill for about an hour in the fridge.
  5. Form into balls and roll in cocoa powder.
  6. Store in refrigerator or or freezer.
