Keto Beef Machacha

Ingredients
- 4 lbs beef chuck roast
- 2 cups salsa, divided (we use pace medium)
- 6 -10 garlic cloves (to taste)
- 2 -4 tablespoons ground cumin
- 1 -2 tablespoon oregano, dried
- 1⁄2 cup unsalted butter, may substitute olive oil
Directions
- Place 1/2 of the spices and seasonings in a large slow cooker.
- Preheat in Microwave 2 minutes.
- Cut beef chuck roast into 8 large chunks.
- Place beef in slowcooker.
- Add the other half of the seasonings and spices to slow cooker and stir.
- Heat in microwave in 2 minute intervals until starting to boil, about 5 minutes total.
- Transfer to the slow cooker with lid tightly sealed. do not open lid.
- Cook on high 3 hours, stir and replace lid.
- Add butter in 1 tablespoon chunks and stir.
- Cook on low for 2-3 hours with lid ajar to reduce salsa to a gravy like consistency.
- Once tender gently shred with 2 forks and turn crockpot to warm.
- For a burrito or quesadilla, serve with low carb tortillas (we use mission lo-carb), top with cheese, guacamole and tomatoes. We also top with a bean and corn relish, yum!
