  1. Place 1/2 of the spices and seasonings in a large slow cooker.
  2. Preheat in Microwave 2 minutes.
  3. Cut beef chuck roast into 8 large chunks.
  4. Place beef in slowcooker.
  5. Add the other half of the seasonings and spices to slow cooker and stir.
  6. Heat in microwave in 2 minute intervals until starting to boil, about 5 minutes total.
  7. Transfer to the slow cooker with lid tightly sealed. do not open lid.
  8. Cook on high 3 hours, stir and replace lid.
  9. Add butter in 1 tablespoon chunks and stir.
  10. Cook on low for 2-3 hours with lid ajar to reduce salsa to a gravy like consistency.
  11. Once tender gently shred with 2 forks and turn crockpot to warm.
  12. For a burrito or quesadilla, serve with low carb tortillas (we use mission lo-carb), top with cheese, guacamole and tomatoes. We also top with a bean and corn relish, yum!
