Kat's Potato Salad

Ingredients
- 5 -6 large idaho potatoes
- 1⁄3 cup Miracle Whip
- 3 tablespoons yellow mustard
- 3 stalks celery
- 1 large onion (I use white, but red tastes good too)
- 1 (3 ounce) jar pimientos (chopped)
- 2 tablespoons dill relish or 2 tablespoons sweet relish
- 2 hard-boiled eggs
Directions
- Cut potatos in small chunks (peeled or unpeeled).
- Combine potatoes in large mixing bowl with chopped celery, chopped onion, pimento, relish and eggs.
- Add MIracle Whip and yellow mustard.
- Salt and Pepper to taste.
- Cover and chill for at least 2 hours (overnight is better).
- Serve.
