Katie's Shortbread Cookies

Yields: 36-48 cookies
Ingredients
- 1 1⁄2 cups butter
- 1⁄2 cup powdered sugar
- 3 1⁄2 cups flour
- 1 teaspoon vanilla
Directions
- Preheat oven to 350°F.
- Cream butter and sugar together, scraping sides with spatula to get it well-mixed.
- Add flour and vanilla - you may still need to scrape the sides. (It may not stick together completely, but that's okay!).
- Roll out dough to 1/4- to 1/2-inch thick, and cut into cookie shapes.
- Transfer cookies onto an ungreased cookie sheet--I recommend putting them on parchment paper.
- Bake at 350°F for 11-14 minutes, watching so your cookies don't burn!
- Cool on wire rack, and store in an airtight container when cooled.
- *** FOR FUN! I melted down some chocolate and dipped the cookies in it--they made delicious and festive Christmas cookies!
