Kamut Salsa Lettuce Wraps With Cojita Cheese Crumbles

Yields: 4-6 wraps
Ingredients
- 1 cup kamut
- 4 cups water
- 8 -10 ounces extra lean ground beef
- 1⁄2 cup salsa
- 1⁄2 cup fresh spinach leaves
- 1 romaine lettuce hearts
- 3⁄4 cup Cotija cheese, (or feta), crumbled
Directions
- cook Kamut according to package directions in the water, drain if necessary.
- brown ground beef, mix in salsa, spinach leaves, and mix with cooked Kamut.
- spoon into romaine leaves.
- top with crumbled cheese.
