Kale, Farro and Feta Salad

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 1⁄2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon black pepper
- 2 cups thinly sliced kale
- 1⁄4 cup sliced shallot
- 1 cup cracked farro
- 2 1⁄2 cups water
- 2 ounces crumbled feta cheese
Directions
- Cook farro in water for about one hour or until desired texture.
- Combine oil through pepper for dressing.
- Mix dressing, greens, shallot, farro and feta.
