Kale Apple and Walnut Slaw

Ingredients
- 1 1⁄2 tablespoons olive oil
- 2 teaspoons sherry wine vinegar
- 1⁄2 teaspoon Dijon mustard
- 1⁄4 teaspoon sea salt
- 1 large bunch kale, trimmed
- 1 large apple, cored and thinly sliced
- 1⁄2 cup thinly sliced green onion
- 3 tablespoons chopped toasted walnuts
Directions
- In small bowl, whisk together oil, vinegar, mustard and salt.
- In large bowl combine kale, apple and onions. Toss with dressing. Top with walnuts.
