K-Jon's Barbecue Sauce

Yields: 5 cups
Ingredients
- 1 cup onion, diced fine
- 2 tablespoons garlic cloves, minced
- 1⁄4 cup canola oil
- 1 1⁄2 tablespoons chili powder
- 1 tablespoon paprika
- 1⁄2 teaspoon kosher salt (to taste)
- 2 teaspoons fresh ground pepper
- 1⁄4 teaspoon cayenne pepper
- 1⁄4 teaspoon white pepper
- 2 cups ketchup
- 1 cup packed brown sugar
- 1 cup cider vinegar
- 3⁄4 cup yellow mustard
- 1⁄4 cup Worcestershire sauce
- 1 tablespoon liquid smoke
Directions
- 1.) Heat oil & onion 10 minutes on medium heat, add garlic 5 minutes more.
- 2.) Add dry ingredients simmer 5 minutes more, add liquid & cover.
- 3.) Simmer 45 minutes on low heat & let cool slightly & blend until smooth.
- 4.) Refrigerate 24 hours before use.
