Junior League - Grilled Chicken and Mango Salsa

Ingredients
Mango salsa
- 6 cups chopped ripe mangoes
- 1 cup finely chopped red onion
- 1⁄2 cup chopped cilantro
- 6 tablespoons lime juice
- 2 large cloves garlic, minced
- 4 jalapeno chiles, seeded and minced
- 1⁄2 teaspoon red pepper flakes
- salt
Chicken
- 24 small boneless chicken breasts
- 3⁄4 cup olive oil
- 1⁄2 cup white wine vinegar
- 3 tablespoons ground ginger, root
- 3 tablespoons coriander
- 1 tablespoon cumin
- pepper
- cilantro
Directions
- Salsa: Mix all ingredients and chill.
- Chicken: Mix all ingredients and pour over chicken. Reserve 1/4 cup of marinade. Marinade for up to 2 days. Drain and grill chicken over medium heat. Pour salsa over chicken on serving plate. Garnish with cilantro.
