Junior League - Chicken Marbella

Ingredients
- 3 whole chickens, cut into squares
- 1 cup brown sugar
- 1⁄2 cup olive oil
- 1⁄2 cup balsamic vinegar
- 1 cup prune, pitted
- 1⁄2 cup pitted green olives
- 1⁄2 cup capers
- 2 tablespoons minced garlic
- salt and pepper
- 1 cup dry white wine
- 1⁄2 cup chopped flat-leaf parsley
Directions
- Put chicken in sealable bag. Combine sugar, olive oil and vinegar. Stir in prunes, basil, olives, caper, garlic, salt, and pepper. Pour over chicken. Marinate for 8-10 hrs in fridge.
- Arrange chicken in single layer with marinade in baking dish. Drizzle with wine. Bake at 350 for 1 hr, basting regularly. Remove the chicken and sauce and plate. Sprinkle with Parsley.
