Yields: 6 meals

Ingredients

  • 4  linguica sausage, skinned and cut into small cubes
  • 2  chorizo sausages, skinned and crumbled
  • 5 (14 ounce) cans stewed tomatoes
  • 1 (12 ounce) can  jalapenos, you can use the kind with carrots mixed in if you choose
  • 2  large onions, diced
  • 6 -7  garlic cloves, minced
  • 2 -3  cups mozzarella cheese, shredded
  • 24  white corn tortillas, cut into 1/6 's
  • 1  dozen egg

Directions

  1. Brown linguica and chorizo in large skillet.
  2. Meanwhile puree the tomatoes, jalapenos, onions and garlic in batches, using a blender. Add to browned sausage. Simmer 2-3 hours.
  3. Heat oil in pan and fry tortilla triangles until golden brown, drain on paper towel or paper bag.
  4. Fry eggs and place on top of chips. Top with sauce and cheese.
  5. Note- The sauce freezes well.
