Joy's Crawfish Fettucini

Ingredients
- 1 1⁄2 cups butter
- 3 medium onions, chopped
- 3 celery ribs, chopped
- 2 bell peppers, chopped
- 1⁄4 cup flour
- 4 tablespoons fresh parsley, chopped
- 3 lbs crawfish tails, peeled
- 1 quart half-and-half cream
- 1 lb Velveeta cheese, cubed into 1/2-inch squares
- 2 tablespoons jalapeno peppers, chopped
- 3 garlic cloves, crushed
- salt
- pepper
- 1 lb fettuccine
- fresh grated parmesan cheese, to taste
Directions
- Melt butter in large heavy saucepan. Add onions, celery, and bell pepper. Cook 10 minutes until vegetables are clear. Add flour; blend in well.
- Cover and cook for 15 minutes, stirring occasionally.
- Add parsley and crawfish tails. Cover and cook 20 minutes, stirring often.
- Add cream, Velveeta, jalapenos and garlic. Mix well. Add salt and pepper to taste.
- Cook, covered, on low heat 20 minutes, stirring occasionally.
- Cook noodles according to package directions. Drain and add to sauce. Mix thoroughly.
- Pour into 3 Quart prepared casserole dish or several smaller casserole dishes (you can divide and fresh at this point as well).
- Sprinkle with Parmesan cheese.
- Bake for 12 minutes at 350°.
- Serve hot with French bread.
