Jitomates Con Alcaparras (Tomato and Capers Salad)

Adapted from Mexican Family Cooking. This is best if the vegetables are chilled.

Directions

  1. Combine all dressing ingredients and mix well.
  2. Strain and set aside.
  3. Place onion slices in ice water to cover.
  4. Let stand 5 minutes.
  5. Drain well.
  6. Line a chilled serving platter with romaine leaves, preferably the pale inner leaves for color contrast.
  7. Place tomatoes on top of lettuce.
  8. Top with onion slices.
  9. Top with capers.
  10. Spoon dressing over salad.
