Jims Strawberry Flan - Guaranteed Compliments

Ingredients
- 11 ounces strawberries, one punnet
- 125 g strawberry jam
- 2 sheets ready made bought puff pastry
- 1 egg
- 3 tablespoons milk
- 3 tablespoons cinnamon
- 3 tablespoons brown sugar
- 125 ml dollop style cream
Directions
- line a pan with oiled baking paper.
- cut the strawberries into fine slices.
- place one sheet pastry on pan on oiled baking paper.
- cut other sheet into 3 cm slices along the entire length of sheet.
- mix egg with milk in a cup or glass disk.
- brush pastry edges and build an edge using cut strips.
- egg wash edges in between.
- prick uncovered part of sheet with fork and place in 140 degree oven for 20 minutes to part cook - until it looks light golden - not fully cooked.
- heat jam in mug in microwave for 40 seconds.
- brush jam into pastry sheet covering all of the central part.
- place strawberries side by side on the middle part until all is covered.
- brush edges with egg wash and sprinkle cinnamon and sugar on edges.
- place in oven for 20-30 minutes.
- When golden take out and let cool.
- serve with a dollop of cream.
