Jicama Apple Salad With Orange-Mustard Dressing

Ingredients
- 4 fuji apples
- 1 medium red onion
- 1 cup jicama, chopped
- 1⁄2 cup orange juice
- 1 tablespoon fresh lime juice
- 2 tablespoons vinegar
- 1 tablespoon mustard
- 2 tablespoons brown sugar
- 1⁄4 cup of fresh mint, chopped
- 1 dash salt
- 1 dash pepper, to taste
Directions
- Cut jicama, apples & onion into thin slices.
- In a bowl whisk all of the rest of the ingredients.
- Taste dressing & add salt & pepper to taste.
- Add dressing to chopped ingredients & toss well.
