Jicama and Orange Salad

Serves: 6-8
Ingredients
- 3⁄4 lb jicama, cut into 1 1/4 by 1 1/2 inch strips
- 1 medium cucumber, peeled and thinly sliced
- 1 small red onion, halved and thinly sliced
- 3 navel oranges, peeled and cut into bite sized pieces
- 1 head romaine lettuce, shredded
- 1⁄4 cup vegetable oil
- 3 tablespoons rice vinegar
- 1⁄2 teaspoon salt
Directions
- In a large bowl, combine jicama, cucumber, red onion, oranges and lettuce. Toss lightly to mix.
- In a small bowl, whisk together oil, vinegar and salt. Pour dressing over salad and toss to coat evenly. Serve at once.
