Jersey Omelet

Yields: 1 8 inch pie pan
Ingredients
- 4 slices bacon
- 2 tablespoons minced white onions, soaked in 2 tblsp. water 5 minutes
- 1 teaspoon shredded parsley
- 1⁄2 teaspoon seasoning salt
- 4 eggs
- 1⁄2 cup light cream
- 1 teaspoon seasoning salt
- 1 teaspoon salt
- 1⁄8 teaspoon black pepper
- 1 cup swiss cheese, grated
- paprika
Directions
- Cut bacon slices in two. Fry until partially cooked, but not crisp. Remove from pan. Saute onion and parsley in drippings until light brown. Season with 1/2 teaspoons seasoned salt. Spread in 8 inch pie pan. Beat eggs slightly with cream. Season with 1 teaspoons seasoned salt, 1 teaspoons salt and black pepper.
- Pour over onions, sprinkle with cheese. Arrange bacon slices on top; sprinkle with paprika. Bake in a 350* oven 15 minutes or until eggs are set and cheese is melted.
