Jelly Roll

Ingredients
- 1 cup sugar
- 4 eggs
- 1⁄2 cup boiling water
- 1⁄2 teaspoon salt
- 1 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon lemon extract or 1 teaspoon vanilla
- favorite jelly
- whipped cream
Directions
- Preheat oven to 400.
- Beat eggs and sugar until light and thick.
- Add flour, salt, baking powder and flavoring.
- Rapidly whip boiling water into batter.
- Pour the mixture onto a cookie sheet fitted with wax paper and sprayed with non-stick cooking spray.
- Bake 10-12 minutes.
- Turn out onto a cloth which has been ran under cold water and wrung out.
- Spread with your favorite flavor of jelly.
- Using a damp cloth, roll up the cake.
- Garnish with whipped cream.
