Jello With Cucumbers and Cottage Cheese

Ingredients
- 1 (3 ounce) package lemon Jell-O gelatin
- 1 cup water, boiling
- 1 teaspoon onion, finely grated
- 1 -2 tablespoon lemon juice
- 1 cup cream-style cottage cheese, small curd (drained)
- 1 cup cucumber, finely chopped (I used 1/2 pf an unpeeled English cucumber ~ the one that comes wrapped in plastic wrap)
Directions
- In a medium or large bowl, dissolve jello in boiling water. Add onion and lemon juice. Chill until partially set, 20 to 30 minutes.
- Beat at high speed until light and fluffy. Fold in cottage cheese and cucumbers.
- Pour into mold or 8-inch square pyrex baking pan. Chill 4 hours or overnight.
