Jeanne's Fried Chicken

Ingredients
- 2 whole chickens, cut up into small pieces
- 1⁄4 teaspoon basil
- 1⁄4 teaspoon thyme
- 1⁄4 teaspoon sage
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon parsley
- 1⁄4 teaspoon onion salt
- 1⁄4 teaspoon marjoram
- 1⁄4 teaspoon rosemary
- 1⁄4 teaspoon cayenne pepper
- 1⁄4 teaspoon tarragon
- 2 eggs
- 1 cup milk
- 2 1⁄2 cups flour
- 4 teaspoons salt
- 1⁄4 teaspoon pepper
- corn oil (no substitute)
Directions
- Preheat frying pan/fryer and heat oil at 400. Grind all spices and herbs together. Add flour, salt, and pepper; set aside. Blend eggs and milk thoroughly in separate bowl and set aside. Cut up chicken at all joints and fillet breast.
- Dip chicken pieces in milk and egg mixture, then drench in flour mixture. Carefully place pieces in hot oil, browning thoroughly on all sides, then continue cooking at 225 in fryer or oven for 30-40 minutes. Drain grease from chicken by placing on rack covered with paper towels before serving.
