Jb's Cuban Black Beans & Rice

Ingredients
- 1 teaspoon olive oil
- 1 medium onion, chopped
- 1⁄2 green pepper, chopped
- 2 minced garlic cloves
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon oregano
- 14 1⁄2 ounces tomatoes
- 3 cups black beans, cooked
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 4 cups white rice
Directions
- Heat oil and sautee first 3 ingredients; add cumin and oregeno and simmer 1 minute.
- Add remaining ingredients (except rice) and simmer for 15 minutes.
- Sever over rice.
