January's Comfort Cake

Ingredients
- 1 cup quick oats
- 1 1⁄2 cups boiling water
- 1⁄2 cup margarine
- 1 cup brown sugar
- 1 cup white sugar
- 3 eggs
- 1 3⁄4 cups flour (plus 2 tbsp if in Europe)
- 1 teaspoon salt
- 2 tablespoons cocoa
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 1 cup chopped nuts
Directions
- In large bowl, mix oatmeal, water and margarine and let stand for 10 minutes.
- Add sugars, eggs and vanilla.
- Add dry ingredients, saving some chocolate chips and nuts to sprinkle on top of the cake.
- Bake at 350 degrees for 40-50 minutes in at 9x13 greased and floured pan.
