Jans Polish Sauerkraut Side Dish

It is easy to prepare and tastes better the next day.

  1. Fry bacon until just about crisp.
  2. Place on a paper towel to drain fat.
  3. Discard fat from frying pan except for about 1 tablespoon.
  4. Chop onion into 1 inch pieces.
  5. Place in pan and saute until translucent.
  6. Place on same paper towel to drain fat.
  7. In a large pot, place sauerkraut,1 or 2 cans of water, bacon and onion.
  8. Cook sauerkraut at least one half hour.
  9. Add salt and pepper to taste.
  10. Serve.
  11. Tastes better the next day.
  12. Optional- You can cook a link (1 pound) of fresh Polish sausage for added flavor and use the meat as part of your meal.
