Jan's Carrot Cake

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups sugar
- 1 dash ginger
- 1 1⁄2 cups vegetable oil
- 4 eggs
- 2 cups grated raw carrots
- 1 (8 3/4ounce) can crushed pineapple, drained
- 1⁄2 cup chopped nuts
- optional 1/2 cup raisins
Frosting
- 1 (8 ounce) package cream cheese, softened
- 1 lb powdered sugar
- 1⁄2 cup butter, softened
- 1 teaspoon vanilla
Directions
- Preheat oven to 350.
- Sift all dry ingredients together.
- Stir in oil.
- Add eggs one at a time and beat well after each addition.
- Add carrots, nuts, and pineapple last.
- Pour into 9x13 pan and bake for 35-40 minutes.
