Jambalaya

Ingredients
- 1 lb chicken breast (skinless, boneless and cut into 1 inch cubes)
- 1 lb smoked sausage, cut into 1/2 inch slices
- 1 lb fresh tomato, diced
- 3 celery ribs, chopped
- 1 small onion, chopped
- 1 green bell pepper, seeded and chopped
- 1⁄2 cup low sodium soy sauce
- 1 tablespoon creole seasoning
- 4 bay leaves
- 1 lb shrimp (frozen cooked, thawed and peeled)
- 3 cups rice, cooked
Directions
- In a slow cooker, combine chicken, sausage, tomatoes, celery, onion, green pepper, soy sauce, creole seasoning, and bay leaves.
- Cover and cook on low for 7 hours.
- Stir in shrimp and rice and cook until heated through.
