Jambalaya

Ingredients
- 1 lb sausage (Emeril's Kicked Up Sausage)
- 1 cup brown rice
- 1⁄4 cup butter
- 1 (10 ounce) can French onion soup
- 2 (10 ounce) cans chicken broth
- 1⁄4 cup green onion, chopped
- 1⁄2 teaspoon pepper
- 1⁄2 lb sliced mushrooms
- 1 lb shrimp
- 1 (10 ounce) can cream of mushroom soup
- 2 (10 ounce) cans Rotel Tomatoes, mild
- 2 (5 ounce) cans ham
- 1 teaspoon parsley
Directions
- In large roaster, melt butter and add mushrooms, green onion, pepper, and parsley.
- Add soups, broth, and other ingredients.
- Bring to a boil and cook until rice is tender.
