(Jamaican) Pepper Shrimp

Ingredients
- 3 lbs shrimp, in shell
- 2 garlic cloves
- 1 cup vegetable oil
- 1 teaspoon salt
- 2 habanero peppers
- 1 1⁄2 tablespoons vinegar
- 2 tablespoons lemon juice
- 1 tablespoon paprika
- 1 pinch allspice (optional)
- 1 tablespoon parsley (optional garnish)
Directions
- Mince the garlic and pepper (you don't want big pieces of pepper or garlic) note: To control the heat, you can certainly remove the seeds from the pepper and discard.
- Heat garlic, oil, salt and habanero peppers, you may also add allspice if you like.
- Add shrimps and paprika to the mixture and stir often .
- Stir and cook for 2-3 minutes.
- Add vinegar and continue to stir & cook for a further 2-3 minutes.
- Drain on paper towels.
- Garnish with parsley.
- Serve warm or cold.
