Jalapeno Tequila Gimlet

Chile-infused tequila is used in place of the traditional vodka.

Ingredients

  • 2  jalapenos
  • 2  cups  white tequila
  • 1  cup fresh lime juice (about 16 limes)
  • 12 cup  agave nectar

Directions

  1. Roast jalapenos over gas flame or under broiler until soft and charred. Stem and chop chiles.
  2. Place chiles and seeds into a jar. Add tequila and let sit 1 hour. Strain through fine mesh sieve and discard solids.
  3. Stir in lime juice, agave nectar and 2 cups ice.
  4. Let stand, stirring occasionally, until ice is melted.
  5. Divide among 8 chilled gimlet glasses.
