JackieOhNo's Carolina Pulled Pork Sandwiches

Ingredients
- 1 onion, chopped (about 1 cup)
- 2 garlic cloves, chopped
- 4 lbs boneless pork butt shoulder roast
- 1 tablespoon dry fajita seasoning mix
- 2⁄3 cup ketchup
- 1⁄3 cup packed dark brown sugar
- 1⁄3 cup cornstarch
- 3 tablespoons apple cider vinegar
- 1 teaspoon salt
- 12 hamburger buns, split
- 2 cups prepared Coleslaw
Directions
- Place onion and garlic in bottom of 3-quart slow cooker. Top with pork; sprinkle with seasoning.
- In small bowl, whisk together ketchup, brown sugar, cornstarch, vinegar and salt until smooth. Pour over pork. Cover; cook 10-12 hours on low.
- Transfer pork to plate, reserving sauce in slow cooker; cool slightly. Using two forks, shred pork into bite-sized pieces; stir back into sauce.
- Fill buns with pork mixture, dividing evenly. Top with coleslaw.
