Jackie Onassis's Italian Rice With Mushrooms

Ingredients
- 1 cup tomatoes, chopped
- 1 lb mushroom, sliced
- 1⁄2 cup onion, chopped
- 3 cups chicken broth
- 1⁄2 cup butter or 1⁄2 cup margarine
- 1⁄2 cup red wine
- 1⁄8 teaspoon pepper
- 1 teaspoon salt
- 1 cup cooked green peas
- 1⁄4 cup parmesan cheese, grated
- 1 cup rice
Directions
- In a large skillet, cook rice, tomatoes, mushrooms and onion in butter for 10 minutes, stirring occasionally.
- Add broth, wine and seasonings.
- Cover.
- Simmer 45 minutes, or until rice is tender and liquid is absorbed.
- Stir in peas.
- Add cheese.
