Special Edition Contest Entry: I came across the contest and since baking and cooking has become my hobby now rather than a chore I decided to attempt being creative, besides in this house all we eat is POTATOES WITH ALMOST EVERTHING...lol my son loves potatoes so i could not go wrong with this and coming home from shopping I wanted to make something quick ,tasty and easy but most of all filling! Directions

  1. DIRECTIONS: you must be able to multi task!
  2. Prepare the package of “simply potatoes” by the directions on the package, est. time 5 minute.
  3. Place the sausage on a microwave safe plate and poke holes in them. Cook those 5 minute in microwave. {Microwaves do vary} while you’re starting your package of potatoes!
  4. In separate pan you will heat the butter and diced onion and bell pepper. Adding your pepper and pinch of salt and bacon bits. Just enough to soften and flavor…est time 2 minute.
  5. You must be quick….
  6. Then in a bowl whisk your eggs adding the cheese slices. Which you put to the side for later.
  7. Now you will put the onions and peppers into the same skillet with the potatoes even the dripping and mix well and continue to cook on a medium flame. About 1 minute.
  8. Now your sausage is ready to slice and dice into chopped pieces and sauté in a separate skillet with the white wine, rosemary and parsley .est. cook time is 5 minutes.
  9. Next you will add the egg and cheese mixture to the potatoes and continue to cook as if it was an omelet.
  10. You are now ready to mix to two {sausage with the potato mixture}.
  11. Basically you will take your wraps, lay flat onto surface and layer potato & sausage mixture in a rectangular shape over center of wrap and then roll them really tight.
