Izakaya Sakura Chicken Salad

Ingredients
- 1 (10 inch) daikon radishes, julienned into matchsticks
- 2 tablespoons oil
- 1 tablespoon vinegar
- 1 tablespoon sugar
- 1 tablespoon umeboshi plum paste (if using plum sauce omit sugar, add 1/4 tsp salt) or 1 tablespoon plum sauce (if using plum sauce omit sugar, add 1/4 tsp salt)
- 1⁄2 teaspoon soy sauce
- 4 ounces chicken breasts, cooked shredded
- 1⁄2 cup edamame, cooked
Directions
- Peel daikon and cut into matchsticks.
- Whisk together oil, vinegar, sugar, plum purée and soy sauce.
- Combine chicken, daikon and edamame. Add dressing and toss to coat.
