Ingredients
- 20 ounces Simply Potatoes Diced Potatoes with Onion
- 1⁄2 lb pepper bacon
- 8 ounces of shredded sharp cheddar cheese
- 1⁄2 cup chopped green bell pepper
- 12 fluid ounces franks, louisiana hot sauce to serve at the table
Directions
- Cook peppered bacon on medium heat in cast iron skillet til crispy brown. Remove bacon and place on paper towel.
- Measure 1/2 cup chopped green bell pepper.
- Remove all but 2 -3 T of grease from pan.
- Add the whole bag of Simply potatoes diced potatoes with onion and the bell pepper and brown.
- When cooked, place in bowl, crumble bacon into potato mixture.
- On microwave glass tray, spread out 4 piles of 1/4 cup each (level) shredded sharp cheese. Pat down into a flat circle. and heat for 2 minutes in the microwave. Remove and place on wax paper for 1 minute -- (Place 2nd batch of cheese piles in microwave) -- before the first batch cools, lay cheese circles over a wooden dowel to form a taco like shape. Fill with the potatoes & bacon mixture -- and serve with your favorite hot sauce.
