Italian Tomato Chicken

Ingredients
- 1⁄2 lb penne pasta (uncooked)
- 1 -2 tablespoon olive oil
- 1⁄2 lb boneless skinless chicken breast
- 1⁄2 cup yellow onion, sliced
- 1 (15 ounce) can diced tomatoes with onion garlic and basil
- 2 tablespoons fresh parsley, chopped
Directions
- Cook pasta in boiling water until al dente.
- Meanwhile, heat olive oil in a large skillet over medium high heat. Cut chicken into 1 inch cubes and add to skillet along with onions. Cook until chicken is browned on all sides and onions are softened. Add tomatoes and reduce heat to medium-low. Gently mash tomato pieces with a spoon or fork to break them up slightly. Simmer 5-10 minutes while pasta finishes cooking.
- Combine chicken mixture with drained pasta and sprinkle with fresh parsley.
