Italian Tomato Chicken

I threw this dinner together one night with ingredients I had on hand. You can vary it to suit your tastes (add cheese on top, or use tomatoes with chilies and cilantro instead of parsley). Show more

  1. Cook pasta in boiling water until al dente.
  2. Meanwhile, heat olive oil in a large skillet over medium high heat. Cut chicken into 1 inch cubes and add to skillet along with onions. Cook until chicken is browned on all sides and onions are softened. Add tomatoes and reduce heat to medium-low. Gently mash tomato pieces with a spoon or fork to break them up slightly. Simmer 5-10 minutes while pasta finishes cooking.
  3. Combine chicken mixture with drained pasta and sprinkle with fresh parsley.
