Italian Style Sausage and Peppers

I cut this out of a magazine years ago. They are delicious. You sauce is outstanding. I have used both Italian sausage and fresh garlic sausage. Both were very good. Show more

Serves: 4-6

Ingredients

  • 2  lbs Italian sausage (sweet or hot) or 2  lbs  fresh garlic sausage
  • 1  large onion, sliced
  • 5  tablespoons  oil (I use extra virgin olive oil)
  • 2  lbs bell peppers (assorted colors red, green, orange or yellow)
  • 1 12 cups ketchup
  • 1  cup water
  •  salt and pepper
  • 8 -10  Italian rolls

Directions

  1. Turn on oven to 350 degrees.
  2. Bake sausage for 1 hour.
  3. Cut into 8 or 10 pieces.
  4. Saute onion in 3 tablespoon of oil until light brown.
  5. add peppers and cook.
  6. stirring constantly for 5 minutes.
  7. Sprinkle remaining oil on peppers.
  8. while turning.
  9. Mix ketchup and water.
  10. add to peppers, mixing well.
  11. add salt and pepper.
  12. cover and simmer for 20 minutes or.
  13. until peppers are tender.
  14. add sausage to peppers.
  15. serve on warm Italian rolls.
